For a 1.5kg joint:

  • Preparation: Bring to room temperature, season generously with salt, pepper, and a touch of oil.

  • Roasting: Place in a preheated oven at 180°C (fan 160°C).

    • Rare: 50 minutes

    • Medium: 1 hour 10 minutes

    • Well done: 1 hour 30 minutes

  • Resting: Cover loosely with foil and rest for 15–20 minutes before carving. This ensures the juices redistribute, giving you tender, flavourful slices.
